On this page you will find a series of videos about our visits to the knife manufacturers and workshops in France and Italy - enjoy watching them

Coutelleria Chambriard

A visit to the Chambriard family in Thiers. The family runs an outstanding knife retail business with certainly the largest selection of knives in France. However, the Chambriards also produce their own Thiers knife range. This includes folding knives in various sizes, table knives and chef's knives.

Manu Laplace

The artist Emmanuel Laplace (Manu) founded his own forge at 4 rue Camille-Joubert in Thiers in 2005. This is where he works, supported by his team Jérôme, Pascal and Stéphanie.

DOUK DOUK

The knife maker COGNET was founded in Thiers in 1902. The DOUK DOUK knives, which are particularly popular and widely used in Africa, have been produced here almost unchanged for almost 100 years.

Roland Lannier

Knife maker Roland Lannier invited us to visit his workshop in Thiers. He, who used to be workshop manager at Perceval and created well-known knife models such as the L08, now works in his own workshop in Thiers, where he makes pocket knives and table knives with concrete handles, for example for the gourmet restaurant Tantris in Munich, as well as unusual pocket knives and chef's knives.

Laguiole en Aubrac

The world-famous Laguiole en Aubrac forge has its headquarters in Espalion near the small town of Laguiole. Laguiole en Aubrac has been producing the legendary Laguiole knives by hand since 1829. Each of the up to 216 work steps is traditionally carried out by a knife smith. Each master blacksmith decorates the back of the knife with his own individual engraving, the famous guillochage. This is genuine craftsmanship and guarantees that every Laguiole en Aubrac knife is unique.

Adrien Giovaninetti

Before Adrien Giovaninetti began his career as a cutler, he studied music and then worked as a jazz musician and guitar teacher. In 2013, Adrien left Paris and began training as a cutler at the Coutellerie Robert David in Thiers. After just three years, he had already developed his first own knife model, the LE LOMBARD.

Atelier Ôdae

Pierre Thomas was born in Perigord/France in 1991. He came to Thiers at the age of 20 and learnt the art of cutlery here. He worked for the Perceval forge, among others. In 2017, the young, talented blacksmith set up his own workshop. Pierre worked for more than 6 months on the development of his ‘Le Passager’. The result is an elegant, beautifully shaped knife that you won't want to put down.

Atelier Névé

Since November 2016, Tim Bernard, knifemaker in Thiers, a municipality in France, has been offering several collections of folding knives as well as individual pieces. His first creation is the Névé. This was followed shortly afterwards by the GYR model.

Perceval

The Perceval company was founded in Thiers in 1995 and initially specialised in the production of fixed knives. Together with the owner Félix Poché, an enthusiastic team of knife makers creates high-end products in the workshop in Thiers, the knife making capital of France.

Arbalete G. David

Founded back in 1810, the forge was taken over by Arbalete Genes David in 1922. The traditional forge is now managed by Christoph Durand. Both Thiers knives and all Laguiole knives are made by hand in the company's own workshop in Thiers.

Au Sabot

Au Sabot is one of the oldest brands in French knife making. The company was founded in 1870 by Étienne Fontenille. Today, the company in Thiers is run by the Sauzedde family. The knowledge of six centuries is thus incorporated into production on a daily basis. All Au Sabot models are manufactured using traditional techniques and the constant integration of modern technology.

Coutelleria Saladini

Saladini is based in Scarperia, a town in Tuscany about 20 kilometres from Florence. The landmark is the Palazzo Pretorio in Scarperia, with its striking tower. Scarperia was founded on 8 September 1306 and its special feature is the old tradition of knife making, or rather ‘cutting iron’, as these objects used to be called in the old days. Saladini wants to maintain this old tradition of handcrafting knives, cutlery and similar objects.

Couperier Coursolle

In 1902, Léon Cousolle presented a new type of knife with a handle embossed in brass in the form of a beautiful engraving. He became the French creator of the knife. Jean-Marc Couperier took over the family business in 1988 and developed new products while continuing to manufacture ‘le Coursolle’, which was known far beyond the country's borders. These are always associated with the solid brass work that has been the unmistakable hallmark of Couperier Coursolle products for years.
