Description

Due to its rigidity, the carving knife allows you to cut thin slices with precision.  


Assembly, polishing, shaping, finishing and sharpening all handcrafted in the workshop in Thiers.

Semi-stainless steel 12C27M (Sandvik) - Cryogenic treatment
Rockwell hardness: 56  HRC
Slow-ground and polished using traditional techniques with scoured buffalo leather.

Material: Arizona Ironwood with mosaik rivets

Arizona Ironwood (Olneya Tesota or Palo Fierro), one of Perceval's key materials, belongs to the Fabaceae family. It can only be worked when it has died naturally and dried on site for about 3000 years. It is a semi-fossil wood, naturally dark and with very pronounced grain patterns.
